Andalusian gazpacho
Summer is here! It is time to enjoy one of the most refreshing and delicious dishes of this time of year. Gazpacho is a cold soup originally from Andalusia, and it is a delicious option for hot days. This recipe is very easy to prepare and requires only a few fresh and healthy ingredients.
Ingredients
1 kg of ripe tomatoes
1 cucumber
1 green pepper
1 clove garlic
2 slices of stale bread
3 tablespoons olive oil
2 tablespoons of white wine vinegar
1 cup of cold water
Salt
Preparation
Wash and cut the tomatoes, cucumber and pepper into large pieces and place them in a food processor.
Add the peeled garlic clove and the slices of hard bread to the vegetables.
Add the olive oil, vinegar and a pinch of salt to the bowl.
Blend the ingredients until smooth.
We add cold water to the mixture as needed to obtain the desired consistency.
Refrigerate for at least an hour before serving.
Gazpacho is traditionally served cold. It is very typical to accompany it with croutons, chopped cucumber, pepper, onion, hard-boiled egg or ham. Experiment and discover your own delicious combinations!
